Clarence Otis

Otis, former chairman and CEO of Darden Restaurants Inc., the world's largest full-service restaurant company, joins Healthy Dining at a time of great growth for the California-based company. Otis also serves on the boards of Verizon Communications, Inc.; apparel giant VF Corporation; the Federal Reserve Bank of Atlanta; and Jazz at Lincoln Center.  He is also a member of the National Board of Governors of the Boys & Girls Clubs of America, the board of trustees of Williams College, the board of trustees of Cleveland Clinic and the board of visitors of Stanford Law School.

“I am pleased to be joining Healthy Dining’s board, especially at such an exciting time for this innovative company which has great potential to make a real difference for restaurants, their guests and for public health,” Otis said. “With consumer demand for nutritious meals on the rise and the FDA mandating the posting of nutrition information on restaurant menus,” Otis explained, “there is an imperative need for Healthy Dining’s expertise, products and services.” 

Under Otis’s leadership, Darden Restaurants enacted several high-profile nutrition initiatives, including partnering with Healthy Dining and featuring all restaurant brands on; getting ready for menu labeling compliance with nutrient analysis services provided by Healthy Dining; and being the first restaurant company to make a pledge to the First Lady’s Partnership for a Healthier America to reduce their restaurants’ calorie and sodium footprint and to offer healthier children’s meals.

Jose Mallabo

Mallabo brings a wealth of knowledge from his varied background in marketing, public relations and digital engagement. He has held senior level positions at Ebay, Inc. and LinkedIn, as well as being a co-founder of the startup Tweetalicious. Earlier in his career, Mallabo worked at the American Heart Association, where he first realized the power of public health outreach. Jose holds a master’s of science in mass communications from San Diego State University and is now the Senior VP of Marketing and Public Relations at Savannah College of Art and Design.

“Understanding how to reach consumers through engagement and real dialogue versus the old top down model is critical when it comes to improving the health of Americans. What we eat is directly linked to our health, and most of us eat out quite regularly, so I see that Healthy Dining is solving a real problem that can enhance and save lives,” says Mallabo.

Anita Jones-Mueller, MPH, is president and founder of HEALTHY DINING. She is a nationally known public health nutrition expert and a market innovator, thought leader and strategist in the healthy eating landscape. Anita was selected by the First Lady, Michelle Obama, as one of five “Women Working Wonders” for “giant barriers” and featured in July/Aug 2015 edition of MORE magazine. She has also been featured in USA Today, New York Times, Los Angeles Times, San Diego Union Tribune, San Diego Business Journal, Santa Barbara News Press and other media venues. Anita writes a Healthy Dining column for Nation’s Restaurant News to share industry best practices and tips for creating and marketing healthful cuisine.

Anita earned a master’s degree in public health from San Diego State University and a bachelor’s degree in health education from Portland State University in Oregon. She is always happily “at work” even at home, promoting the benefits of healthful eating to her two daughters and husband.
